A little history.

Native to tropical areas of Asia, the bergamot tree is now cultivated in Mediterranean regions, particularly in southern Italy. It is a broad-leaved evergreen tree with fragrant white flowers and fruits with aromatic bark. It can reach up to 10 meters in height. The bergamot tree is believed to have appeared as a seedling, probably as a hybrid, in Calabria, between the 14th and 16th centuries. It also grows in Ivory Coast, Greece, South Africa, Morocco, and Argentina.

The use of bergamot in perfumery dates back centuries in Italy, where it was originally cultivated for its medicinal properties. It was the Sicilian Francesco Procopio , known as Procope, a cook and founder of the eponymous café, who introduced bergamot to the court of Louis XIV in 1686. This new essence was then adopted by sovereigns and nobles. Bergamot adorned the dishes of the time with new flavors, giving them a fresh and tangy touch. It was also used in the form of water on the temples, body, and clothing to protect against illness and mask any unbearable odors, especially in the absence of latrines...

A hand harvest in winter.

Bergamot is a fruit that turns from green to yellow in the winter sun. Harvesting begins in November and ends in January. It is done by hand due to the delicate nature of the fruit. The fruit weighs between 80 and 200 grams. It differs from its cousin, the lemon, in its rounder shape and smoother surface, which is green when young and yellow when ripe. Its flesh, slightly acidic and bitter, is not edible. The quality of citrus fruits depends on the harvest period, varying between more floral or greener notes depending on the harvest month.

The natural powers of its essence

The quintessence of bergamot is found in its zest. Fresh bergamots are stored for 2 to 3 days to allow the fruit to warm up and the peel to soften. The peel—not the juice—is then extracted by cold pressing (i.e., not heated) to obtain the natural bergamot essence, which has all the characteristics of freshly squeezed peel.

Bergamot essence is characterized by its fresh, sparkling, slightly tangy, and floral notes. It can evoke lavender.

Bergamot oil has many properties used in aromatherapy. It contains limonene, lynalyl acetate, and various fucoumarins, including bergapten. It is known for its antiseptic, soothing, and energizing properties.
